Tomatokeftedes (Santorini Tomato Fritters)

INGREDIENTS:
4 RIPE TOMATOES, CHOPPED/DICED/PUREED (YOUR PREFERENCE)
1 SMALL ONION, FINELY CHOPPED
1/2 CUP FRESH HERBS (LIKE PARSLEY AND MINT), CHOPPED
1 CUP ALL-PURPOSE FLOUR
1/2 TEASPOON BAKING POWDER
SALT AND PEPPER TO TASTE
OLIVE OIL FOR FRYING
INSTRUCTIONS:

Prepare the Mixture:
- In a large bowl, combine the CHOPPED/PUREED/diced tomatoes, chopped onion, and herbs. Mix well.

Add Dry Ingredients:
- Sprinkle in the flour, baking powder, salt, and pepper. Stir until the mixture is just combined. The batter should be thick enough to hold its shape but not too dry.

Heat the Oil:
- In a frying pan, heat about 1/2 inch of olive oil over medium heat.

Fry the Fritters:
- Once the oil is hot, drop spoonfuls of the mixture into the pan. Fry until golden brown on both sides, about 3-4 minutes per side.
- Remove and drain on paper towels.

Serve:
- Serve warm, optionally with a side of yogurt or tzatziki for dipping.
