Tomato Fritters

Tomatokeftedes (Santorini Tomato Fritters)

INGREDIENTS:

4 RIPE TOMATOES, CHOPPED/DICED/PUREED (YOUR PREFERENCE)

1 SMALL ONION, FINELY CHOPPED

1/2 CUP FRESH HERBS (LIKE PARSLEY AND MINT), CHOPPED

1 CUP ALL-PURPOSE FLOUR

1/2 TEASPOON BAKING POWDER

SALT AND PEPPER TO TASTE

OLIVE OIL FOR FRYING

INSTRUCTIONS:

  • Prepare the Mixture:
    • In a large bowl, combine the CHOPPED/PUREED/diced tomatoes, chopped onion, and herbs. Mix well.
  • Add Dry Ingredients:
    • Sprinkle in the flour, baking powder, salt, and pepper. Stir until the mixture is just combined. The batter should be thick enough to hold its shape but not too dry.
  • Heat the Oil:
    • In a frying pan, heat about 1/2 inch of olive oil over medium heat.
  • Fry the Fritters:
    • Once the oil is hot, drop spoonfuls of the mixture into the pan. Fry until golden brown on both sides, about 3-4 minutes per side.
    • Remove and drain on paper towels.
  • Serve:
    • Serve warm, optionally with a side of yogurt or tzatziki for dipping.
